Need Something Quick and Easy for Dinner?

I love to try out new recipes, but lately I have been so tired that it's hard to stay on my feet in the kitchen for long periods of time. I recently tried two new recipes that were super easy and were really tasty. It's always a good recipe when your husband asks if you'll make it again soon. Wanted to share these for those who are in need of a quick and easy meal. First of all, I found this creamy potato soup recipe in my Paula Deen magazine and it's great...especially for those cold nights when you need some comfort food.

Creamy Potato Soup
30 ounce bag frozen hashbrowns
3 15 ounce cans of chicken broth
1/2 onion chopped (if you don't feel like chopping onion--buy Potatoes O'Brien which has the onions and bellpeper frozen with the hashbrowns) and add a bag of that in with a regular bag of hashbrowns.
1 can cream of chicken soup
1 8 oz. block of cream cheese
Cheddar cheese, sour cream, green onions, real bacon bits, for garnish (optional)

Dump hashbrowns, chicken broth and cream of chicken into the slowcooker and cook on low for five hours. Add block of cream cheese and cook for 30 more minutes. Stir occasionally to blend/melt cream cheese. Ladle into bowls and top with shredded cheddar, sour cream, real bacon bits or garnish of your choice.

The second recipe is for Salsa Chicken. I saw this recipe on Baby Blog Addict's site a few weeks back. It's a great one-dish Tex-Mex meal.

Salsa Chicken
4 boneless, skinless lean chicken breasts halves (cooked in oven or on grill--I marinated lean breasts with olive oil, lemon juice, garlic salt, onion powder and pepper overnight and then grilled until done but still juicy)
1 cup salsa
1 package taco seasoning
2 cups water
1 can black beans
1 cup Monterey Jack or cheddar cheese (or mixture of the two)
2 cups Minute Rice

In a saute pan, add chicken breasts, salsa, taco seasoning and water and bring to a boil. Reduce heat and simmer for 5-10 minutes. Add 2 cups of minute rice, can of black beans, and top with cheese. Stir well. Bring back to a boil and then reduce heat and simmer for 5-10 minutes. You can add additional cheese and top chicken with sour cream if you wish. Voila! Instant one-dish wonder. You can add a side of whole kernel corn or corn-on-the-cob for a complete meal.
